We founded Ironbark on a single idea: that great spirit cannot be rushed. Every drop begins as local grain, is coaxed through our copper pot stills by hand, and then left alone — in oak, in the dark — for as long as it takes.
No shortcuts. No column stills. No compromise.

Our warehouse holds four thousand casks, breathing slowly through the seasons. We simply keep the lights low and let time do the work.
Matured a full decade in first-fill oak. Deep, unhurried and warming — the spirit we built the house upon.
Seventeen botanicals, foraged and distilled the same week. Bright juniper over a slow, earthy warmth.
Rested seven years in charred ex-bourbon oak. Molasses-dark, with a long, spiced finish.
Local barley, floor-malted and kilned over a low peat fire.
Twice through copper pot stills — slow, with a narrow heart cut.
Filled into oak and left in the dark warehouse for years.
Drawn by cask, un-chill-filtered, numbered and sealed by hand.
Tour the warehouse, nose straight from the cask, and taste the range in our tasting room. Guided tours run Thursday to Sunday.
